Possum Pie Anyone?

What do you do with a frozen opposum that decides to breathe his final breath in the shrubs right up next to your house? You make possum pie or opposum stew, right? From Cooks.com, here is a recipe for Southern Style Roasted Opposum:

(Opossums that have been feeding out of garbage cans aren't too tasty; those that have been feeding on wild foods are.)

1 opossum
Salted water
Freshly ground black pepper
Salt (if desired)
Sage or poultry seasoning
Sweet potatoes
Brown sugar
Butter

Do not skin the opossum. To dress the opossum, dip it in scalding water and pull out the hairs. Remove scent glands. Parboil for about 1 hour in enough salted water to cover. Pat dry, then place in a roaster into a 350 degree oven, draining off fat as it accumulates. After the roast has browned a bit, season with salt and pepper and a sprinkle of sage or poultry seasoning. After an hour of roasting, add sweet potatoes which have been parboiled 20 minutes in their jackets, then skinned and cut into thick slices. Sprinkle the sweet potato slices with brown sugar and add a dot of butter to each slice. Continue roasting until opossum and potatoes are tender, about 1/2 hour.

Possum Pie sounds much better, as the main ingredient is eliminated all together!

Possum Pie
2 c. flour
2 sticks soft butter

Blend together and add 1/2 cup chopped pecans. Pat this in a 9 x 13 pan and bake for 20 minutes at 350 degrees. Cool.

Blend 8 ounce of soft cream cheese and 1 cup powdered sugar. Stir in 1 cup of Cool Whip (13 ounce container). Pour 1 large box of instant chocolate pudding (made up) on the crust, then pour on the cream cheese mixture and spread the remaining Cool Whip. Sprinkle with chopped pecans.

We're not quite sure why this little fellow's life ended the way it did. But, I can assure you that we did not roast him in a stew. We are not ones for wild gamey casseroles and such. The recipe above is a legitimate recipe for opposum. The opposum was once a popular game animal in the U.S. and in particular the Southern region.

Too cold? Too little to eat? You will never know. I am glad you didn't eat it though. I know people still do, but it looks too muh like a rat to me. Ican't help but think, "unclean".

Your source is excatly right, CL. I remember my brothers hunting possums for an elderly neighbor to cook. I hope I didn't have any--can't remember. Do the possums drive Cooper crazy? That used to be such a problem when I had more than one dog--they would crawl under the deck where the dogs could only smell them--one year there were babies.

BTW, I'm hosting Fun Monday on the 15th. Come by on Wed. evening to get the topic and sign up.

Poor fellow. Maybe he heard how nice you are and figured you'd dispose of him properly. Or maybe he was just lost. LOL.

My mother grew up eating what my grandfather trapped, hunted and fished. She has actually eaten a possum and says it's greasy and nasty. She'd rather starve than eat one again. I don't blame her.

I hit two possum's with my car two nights in a row at the same spot. The first one ran out in front of my car and had he kept going I wouldn't have hit him, but he stopped and played possum and it went thump, bump and that finished him. The next night, same spot, another possum ran out in front of my car. I quickly swerved knowing that he would stop and play possum. He didn't. It went thump, bump again and that was the end him. And no I did not cook my road kill. Possum's are nasty looking, nasty acting and must be nasty tasting.

Beautiful Barn picture. I thought I could steal it for a Sunday morning slide show, but I saw the little copyright symbol and so I shall not steal. Darn!
