Sweet Pickles

If you have an abundance of cucumbers from your summer garden, you may want to try this great recipe for sweet refrigerator pickles. A few weeks ago, I posted a recipe for spicy pickles here. Both recipes are easy and yummy!

Sweet Pickles

7 cups sliced cucumbers
2 cups sugar
1 cup sliced sweet onion
1 cup white vinegar
1 tbsp. salt
1 tsp. celery seed

Combine cucumbers & onion in a bowl. Add sugar, salt, vinegar and celery seed.

Mix Well.

Cover & Refrigerate 24 hours.

Divide pickles into about 4 jelly jars.

Keep refrigerated.

My dad's favorite pickle recipe was very similar to this. He would spoon the pickles out of the brine and then take a bit of the brine and mix it with mayonnaise and pour it over the pickles, then he would pepper them and eat them with a look of bliss on his face.

Bet these don't last long! Better make that baloney sammich before they're gone! sure beats those 14 day jobs that I used to make in a more ambitious time.
